Ingredients

6 small apples
6 Tbsp. brown sugar
1 tablespoon ground cinnamon
1/4 tablespoon ground nutmeg
1/2 tablespoon ground ginger
1/4 tablesppon ground allspice
1 gal. apple cider
10 whole cloves
1 lemons
2 cinnamon sticks,
3 star anise pods
1 cup cranberry juice cocktail
Bourbon or brandy, for serving (optional)

Instructions

1.Prepare the Apples:

Preheat your oven to 350°F (175°C).

Core 6 small apples and place them on a baking sheet. Fill the center of each apple with 1 tablespoon of brown sugar.

Bake for about 20 minutes, or until the apples are soft but still hold their shape.

2.Prepare the Spiced Base:

In a large pot, combine 1 tablespoon ground cinnamon, 1/4 tablespoon ground nutmeg, 1/2 tablespoon ground ginger, and 1/4 tablespoon ground allspice.

Add your choice of liquid base, such as apple cider, ale, or a mix of cider and wine (about 1 gallon). Stir well to blend the spices.

3.Simmer the Wassail:

Place the pot over medium heat and bring to a gentle simmer. Reduce the heat to low and let it simmer for 30 minutes, stirring occasionally to infuse the flavors.

4.Add the Apples:

Carefully place the baked apples into the pot. Allow them to soak in the spiced liquid for an additional 10 minutes.

5.Serve:

Ladle the warm wassail into mugs, ensuring each serving gets a bit of the baked apple.
