Instructions

1.Preheat the Oven:

Preheat your oven to 425°F (220°C). Proper preheating is crucial for achieving the signature puff of popovers.

2.Prepare the Baking Tins:

Grease your popover or muffin tins thoroughly with melted butter or non-stick spray. You can also use parchment paper or silicone liners to prevent sticking and add extra flavor.

3.Mix the Dry Ingredients:

In a large mixing bowl, combine 4 cups of all-purpose flour, 1 teaspoon of salt, 2 teaspoons of sugar (if using), and 2 teaspoons of baking powder. Whisk together until well blended.

4.Heat the Milk and Butter:

In a medium saucepan, warm the 4 cups of milk and 1 tablespoon of melted butter over medium heat until the butter is fully melted and the mixture is hot but not boiling. This helps to activate the baking powder and create a lighter batter.

5.Combine Wet and Dry Ingredients:

Gradually pour the hot milk mixture into the dry ingredients while whisking continuously to prevent lumps. Alternatively, you can pour the milk mixture over the dry ingredients in a large mixing bowl and whisk until smooth.

6.Add the Eggs:

Separate the eggs: Place the egg yolks in the batter and whisk them in thoroughly.

In a small bowl, beat the egg whites until they form stiff peaks. Gently fold the beaten egg whites into the batter to incorporate air, which helps the popovers rise beautifully.

7.Rest the Batter:

Cover the batter with a clean kitchen towel and let it rest for about 20-30 minutes. This allows the flour to hydrate fully and improves the texture of the popovers.

8.Fill the Tins:

Carefully fill each prepared popover or muffin tin about ¾ full with the batter. Avoid overfilling to allow space for the popovers to rise without spilling over.

9.Bake the Popovers:

Place the tins in the preheated oven and bake for 20 minutes at 425°F (220°C). Do not open the oven door during this time, as maintaining a consistent temperature is key to proper rising.

After 20 minutes, reduce the oven temperature to 375°F (190°C) and continue baking for an additional 20-25 minutes or until the popovers are golden brown and have puffed up.

10.Cool Slightly:

Once baked, remove the popovers from the oven and let them cool in the tins for about 5 minutes. This helps them set and makes removal easier.
